fall-inspired charcuterie board

super simple! (it is really just a collection of your favorite crackers, meats, & cheeses!

ingredients i used::

trader joe’s pumpkin & cranberry crackers, flax seed crackers, & trader joe’s sourdough & rye crackers

salami

riccotta dip with honey! (this is amazing!)- all you do is combine 2-3 scoops of room temp ricotta with a solid drizzle of honey, stir to combine, then enjoy!

arugula salad

tbh, i just bought the trader joe’s lemon arugula basil salad kit (it is fantastic & great in a pinch!)

but another favorite of mine includes::

arugula

goat cheese

cranberries

pecans

toss together & top with a drizzle of balsamic vinegar!

parmesan & herb acorn squash

this recipe was fantastic! & such a fun, delicious, fall veggie!

ingredients::

1 acorn squash (cut the top & bottom off, place on a flat side, cut in half. scoop out the seedes, then cut into crescent shapes ~1 inch thick)

olive oil

herbs/seasonings:: basil, herbs de provence, salt, garlic salt, pepper

parmesan

preheat oven to 425. place acorn squash on parchment paper & drizzle with olive oil, herbs, & shredded parmesan. flip & repeat. put in the oven for 20-25 minutes.

anti-inflammatory butternut squash & pumpkin gnocchi

i wanted to add a bit of protein to this dish (chicken sausage!), but you can also keep it vegetarian!

ingredients::

trader joe’s pumpkin gnocchi (or any gnocchi!)- cook according to package

cubed butternut squash

choice of protein (cooked & prepped)

salt, pepper, turmeric, parmesan

olive oil & optional truffle oil

let the butternut squash soften with the olive oil, salt, pepper, turmeric & oliv oil in a pan. add the chicken sausage & gnocchi once the butternut squash is slightly softened. drizzle with more olive oil or optional truffle oil (My favorite!…a little goes a long way!)
