an anti-inflammatory summer mocktail

there is something so refreshing & nostalgic about sipping a delicious bev by the pool in the summertime. striped towel draped over a striped beach chair resting beneath a striped umbrella… just the thought makes you say ahhhhh. but while the cabanas serve up wonderful cocktails with fancy little umbrellas, sometimes you want the refreshing nostalgia without the alcoholic after-effects. enter: the summer mocktail. equally delicious & nostalgic for being right in your own home. fancy umbrella can be included :) this one also comes with added anti-inflammatory & hydration benefits!

  • gather the ingredients.

    • 1oz of fresh turmeric root (2-3 inches long), fresh ginger root (~2-3 inches), 2 large carrots, 1 lemon, 1 TBSP of olive oil, a sprinkle of black pepper

    • coconut water (does not get blended in the vitamix)

  • option to prep the ingredients: option to peel the ginger & turmeric root. (although you don’t have to! the straining process will help with this)

  • blend together with ~3-4 cups of water. (we just used our vitamix!)

  • strain into a juice container.

  • pour coconut water over ice & top off with fresh juice.

  • sip, sip, enjoy!
